Nisin, also known as nisin or transliterated as Nisin, is a polypeptide produced by Streptococcus lactis and consists of 34 amino acid residues with a molecular weight of approximately 3,500 Da. As nisin inhibits most Gram-positive bacteria and has a strong inhibitory effect on spores of Bacillus, it is widely used as a food preservative in the food industry. After being eaten, it is quickly hydrolyzed into amino acids under the physiological pH conditions of the human body and α-chymotrypsin, which will not change the normal flora in the human intestinal tract and produce resistance problems such as those caused by other antibiotics, and will not react with other antibiotics. Cross-resistance is a natural food preservative that is highly effective, non-toxic, safe, and has no side effects.
