Chemical properties:

Colorless to white fine columnar crystal or white crystalline powder, slightly special smell and taste (slightly acid). Reducibility, anti oxygen and prevent non enzymatic browning effect. The melting point of 175 DEG C (decomposition). Soluble in water, an acidic aqueous solution, pH value at 3% to 1.2, 1% to 1.7, 0.1% to 2.4. Also soluble in ethanol, ammonia and acetic acid, insoluble in ether, acetone, benzene, carbon disulfide and chloroform.

One amino acid, but is a non essential amino acid.
