Characters: the appearance is white amorphous substance, odorless, tasteless.

Soluble in containing 8% lithium chloride two methyl acetamide or strong acid; insoluble in water, dilute acid, alkali, ethanol and other organic solvents.

In the nature, chitin is widely lower plants, fungi, insects, shrimp crab carapace animal shell, the fungal cell wall etc..

It is a linear polysaccharide polymer, i.e. neutral mucins natural polysaccharide, if concentrated alkali treatment to remove the acetyl groups to obtain chitosan. Chitin chemically inert, does not change with body fluids, non-toxic to the organization can not afford, foreign body reaction, has the characteristics of anti thrombosis, high temperature sterilization etc.. Chitosan is an alkaline polysaccharide, a check acid, anti-inflammatory effect, can reduce cholesterol, blood lipid.
