The Milk and Coffee Set includes a 6 cup Moka Express and a non-stick milk frothing pitcher. Simply add hot milk to the pitcher and use the plunger to generate a frothy milk for cappuccino. It comes in a boxed set that makes a great gift. Who are we kidding? You might as well buy two, because you'll want one for yourself!
We offer the Moka Express in a 1, 6, or 12 cup version. Note that when talking about the Moka Express, a "cup" is a "tasse" which is equal to about 2.2 ounces.
Another tip: We recommend hand washing your Moka Express. Dishwashers tend to discolor the aluminum, and it will darken--doesn't hurt it, but it doesn't look as neat and shiny either. The more you use your Moka Express, the more it will "season" and will produce better and better coffee.
A tip: We put just a tiny bit of water in the upper chamber before placing our Moka Express on the stove so that the first coffee to enter the upper chamber doesn't flow on to hot metal and scald.
As the water in the lower chamber begins to boil, it creates steam which drives the water in the lower chamber up through the stand pipe attached to the coffee basket. This water is under pressure, and the packed coffee and the filter screen force the pressurized water to infuse the coffee grounds before the water/coffee continues into the stand pipe located in the upper chamber and then flows out into the upper chamber. (A lot simpler to operate than it is to describe). As the water in the lower chamber begins to empty out, you'll notice a "sputtering" of coffee coming out of the stand pipe in the upper chamber. That's the signal to remove it from the burner and let it sit until all the bubbling and sputtering has stopped. Now you're ready to use your intense brew in the manner you choose. If you're a straight shooter espresso drinker, pour into a demitasse cup and enjoy. If you like milk or flavorings, go for it!
Using it is pretty simple, too. Just unscrew the upper chamber from the lower one, remove the basket, fill the lower chamber with water (NOTE: Just fill up to the bottom of the pressure safety relief valve), replace the basket, fill the basket with a fairly finely ground coffee, tamp the grounds a little (don't tamp as hard as you would for a normal espresso portafilter), screw the top chamber back on, and put it on the stove to boil.
The Moka Express only has 5 parts, and none of them move. The upper chamber (the part with the handle and the attached lid), the lower chamber, an internal basket to hold the ground coffee, a filter screen and a rubber gasket. Pretty simple.
