When you use a block ice shaver, insuring an adequate inventory of blocks to shave is your responsibility. Normally you cannot purchase round blocks. So, production of round ice blocks is a "Do it yourself" project and, a very inexpensive way to keep your cost per serving down. When you pick or saw 50 lb. blocks into smaller chunks, it is a little difficult to keep the machine in balance. It is very important for you to learn to freeze round block ice. It is important to have literally hundreds of blocks made up in advance. When you are out of round blocks, you may be out of business! It is important to have a dozen or two dozen moulds "working" at all times then pack your blocks in poly bags and repeat the freezing process.
