Horizontal portioning of breast meat Ideal for large broilers and turkeys Cuts fixed weight, top or bottom lobe Intelligent cutting decisions More product within tolerances Automatic computer
vision Measures calculates cutsOne of the latest additions to the Marel stable, the Marel Intelligent Slicing Machine (ISM) uses information from a vision system to raise or lower a cutting
mechanism, which portions horizontally into more uniform portion weights than those achieved by conventional mechanical slicersUsing only a few simple strokes of the keyboard, the operator can
specify the tolerance of either the top or bottom lobe and the machine does the rest, selecting the most economical configuration to cut breasts to a fixed weight, or leaving them uncut if they are
unsuitable for portioning. The top lobe is left looking like a neatly trimmed small fillet, while the bottom lobe is ideal for strips, breaded or battered items. At the same time, the ISM can also
portion the top or bottom lobes of breast meat to a fixed height, and as its cutting mechanism doesn't flatten, tear or damage tissue, it offers gentler handling and significantly less product
waste than conventional systems, meaning more portions go into high-value categories. Use of the Marel ISM means that meat can be cut into food service weights, as opposed to commodity products. At
the same time, the ISM enables the operator to keep the natural shape of the meat, while it can also cut to a specific thickness. As every large scale processor is today only too aware, this is a
critical consideration, given that many fast-food chains and major retailers now specify extremely tight acceptable limits. Like all Marel equipment, the ISM is designed with hygiene and
reliability in mind. Easy to clean and able to withstand the harsh washdown environment found in poultry processing plants, all materials used in its construction are USDA approved, with pneumatic
air cylinders used to raise the vision unit and open up the cutting mechanism.Robust, hard-wearing and built to last, the Marel ISM is designed for minimum maintenance and downtime. Its
single-blade cutting mechanism contains very few components, all of which come as easily serviced standard modules. And with no water nozzles, high-pressure pumps, or filter systems present to
jeopardize operations, the ISM is built from components tried and tested for years in other Marel units.
