In forced ventilation ovens without steam generators, an air-flow goes through the heating elements by means of a fan: in this case the air inside the oven is dry and free from "alien particles", thus preventing corrosion, whereas in the case of air-and-steam combi-ovens, always thanks to a fan, the air-flow goes through the heating elements but, since the air has a variably dry steam content, corrosion may emerge on the heating element owing to the "aggressive" operating environment.
