The prevention of bruising keeps the acidity level low. The olives are then washed and spread onto a granite table. Large granite rocks are rolled over the olives to smash them and make a paste. The paste is transferred to fiber mats that are stacked inside a hydraulic press. Tremendous pressure is exerted to extract the oil. This is called first cold press extra virgin olive oil. There is no heating involved. The oil extruded from the paste is then decanted-meaning all of the water is separated from the oil. The oil is then filtered and drummed.
