Olive and Olive oil culture have ancient roots. Fossilized remains of the olive tree's ancestor were found near Livorno, in Italy, dating from twenty million years ago, although actual cultivation probably did not occur in that area until the fifth century B.C. Olives were first cultivated in the Eastern part of the Mediterranean, in the region known as the "fertile crescent," and moved westwards over the millennia.
Beginning in 5000 B.C. and until 1400 B.C., olive cultivation spread from Crete to Syria, Palestine, and Israel; commercial networking and application of new knowledge then brought it to Turkey, Cyprus, and Egypt. Until 1500 B.C., a part of Greece named as Mycenae was the area most heavily cultivated. With the expansion of the Greek colonies, olive and olive oil culture reached to Southern Italy and Northern Africa in the eighth centuries of B.C., then spread into Southern France. Olive trees were planted in the entire Mediterranean area under Roman rules. According to the historian Pliny maintained that Italy had "excellent olive oil at reasonable prices" by the first century A.C and "number ONE in the Mediterranean".

It is also valued for its culinary virtues and organoleptic properties as well: flavor, aroma, and color.It is also used for candles in the past centuries for lighting.The special soaps are produced by olive oil and it is very healthy for our bodies and olive oil is very important ingredient for pharmacy and medicine.
Olive tree lives for a long time and it is named as "Immortal tree".The mainland of the tree is Aegean and Mediterranean areas.In 1300 B.C., Olive crowns and olive branches, emblems of benediction and purification, were ritually offered to deities and powerful figures: some were even found in Tutankhamen's tomb. Olive oil is obtained by the same rules of Roman for 200 years without any chemical additives and processes.It has nutritional and salutary virtues.
Climate, soil, variety of the tree, and the harvesting time (mature of the fruit) give the different organoleptic properties of different olive oils.Extra virgin olive oils are blends of varieties of olives.Extra-virgin olive oil with perfect taste is oil of the highest quality , it should be at a minimum organoleptic rating of 6.5 out of 10, low acidity (1% or less), and should be without treatment.Olive oil should be at a minimum organoleptic rating of 5.5, a maximum of 2% acidity and should be without treatment.In Turkey, the best quality of extra-virgin olive oil is produced in Aegaen region , espacially in Ayvalk and at other sea sides.
