Produced in Avanzi's oil mill using grindstones and solely cold processing, this oil is labelled "summer", a term used by Lucio Giunio Moderato Columella. This Roman agronomist, in his treatise written in 54 A.D., defined an oil as "Summer" when produced with olives harvested in early October (earlier than usual) making the product better at the cost of quantity.
