Pomace olive oil is made from the rinds, stems, seeds, and skins of the olives which are then cooked and centrifuged to extract remaining oil. With an acidity level of 4.0% to 7.8% and a smoke point of 375 degrees, pomace oil is blended with pure or extra virgin olive oil to reduce the acidity level and give a light yellow color that is acceptable to the consumer. Due to acidity level, it is primarily used when blended with vegetable oils, or a salad dressing (industrial) ingredient. Currently available in 1 gallon tins.
