The leaves, stems, and flowers are harvested and steam-distilled to obtain a pale yellow, sweet smelling oil with a strong odour of aromatic lemon.
Lemon balm is a perennial herb, but the plant may die back during cold winters. It grows into a spreading bush with a height of about one meter. It has yellowish-green, heart-shaped leaves that are somewhat hairy and bluntly serrated. The leaves turn true-green in summer. During summer, it bears small and insignificant, whitish to blue-white flowers in loose small bundles in the axils of the leaves.
