In the opinion of the most appreciated olive oil experts the best extra virgin olive oils in the world are produced in Italy, where the princes have long been considered Ligurians and Tuscans.Ligurian olive oils are renowned for being particularly mild and delicate and are famous for their round taste and sweetness, in contrast to Tuscan or Apulian olive oils, which tend to be strong and fruity. In Liguria the scarcity of plowed land restricts agriculture and olives must grow on barely accessible slopes terraced all the way down to the sea. The most extensive groves lie in the Eastern part of Liguria, mainly in the Imperia and Savona provinces. Here there are little cultivars, including the region's principal variety, the Taggiasca.
