In spite of the fact that, sesame oil contains high proportion(41%) of fatty acids it is least prone, among cooking oils to turn rancid. This is due to the natural antioxidants present in the
oil,because of this it carries a premium relative to other cooking oils.
Other than cooking the oil is used for various purposes such as

2.Food manufacture.
3.Drug manufacture. etc
Sesame oil is a source of vitamin E which is an anti-oxidant and has been correlated with lowering cholesterol levels.As with most plant based condiments, sesame oil contains magnesium,copper,
calcium, iron, zinc and vitamin B6. Copper provides relief forrheumatoid arthritis. Magnesium supports vascular and respiratoryhealth. Calcium helps prevent colon cancer, osteoporosis, migraine
andPMS. Zinc promotes bone health.
Gingelly or sesame oil is an edible oil. t is used mainly for cooking in south India.
