During milling or drying process, the kernel of rice gets cracked in the field which results in to broken rice. These Cracks are usually caused by moisture migrating too quickly within the kernel. The percentage of broken kernels generated during milling usually ranges from 12% to 15% but most broken are removed during the milling process to less than 4% in order to give the consumer a high quality rice.. There are different sizes of broken kernels depends upon the type of rice (white, parboiled, brown). The type of rice is a lower quality of rice and usually used for baby formulas, rice cereals as well as pre-package or can food.
