Food quality of millet is determined primarily by a high content of starch (70%). Protein substances in millet - 12-15%, and they include all the essential amino acids. Millet is high in fat (2,6%
-3,7%). Cellulose in it - 0,5 - 0,8% ash: - 1,0 -1,4%, there is a small amount of sugar (up to 2%) presented by raffinose, maltose, sucrose and glucose. It is rich* in phosphorus, potassium and
magnesium. According to the content of vitamins millet occupies a middle position: Vitamin B1 - 4 mg / kg, vitamin B2 - 0,5 - 1 mg / kg, vitamin PP - 10-12 mg /kg.
