Wheat

Wheat is one of the most important cereal crops. Wheat can grow in a wide range of soil-climatic conditions and is cultivated practically in all agricultural zones, except for tropics. The heat is also not dangerous for it, if it is not combined with high humidity: in the last case cultivation becomes unprofitable because of heavy damage caused by various diseases.
There are thousands grades of wheat, and their classification is complex enough, but there are only two main types  hard and soft. Soft grades are divided also on red-grained and white-grained. Usually they grow up in regions with the guaranteed humidifying. Hard grades are cultivated in areas with dryer climate.

The wheat grades are divided on winter and summer. Winter wheat is sown in the autumn and gathered Soft and hard grades of wheat have much in common; however they differ by a number of attributes which are important for use of flour. Historians approve, that the difference between two types of wheat was known to ancient Greeks and Romans, and possibly to even earlier civilizations. In the flour which was received from soft grades, grains of starch are larger and softer, its consistence is thinner and more friable, and it contains less of fibrin and absorbs less water. Such kind of flour is used for baking of confectionery products mostly, but not bread, because the products from it are crumbled and get hardened very quickly. In areas of cultivation of soft grades bread is baked from its mix with the flour received from imported firm grades.next summer. It is the most widespread type of wheat. Spring wheat, except T. durum; grows in those places where the winter is too severe. From flour which is received from grains, the white bread is baked and other foodstuffs are produced. Waste of flour-grinding manufacture serve as forage to cattle and poultry, and recently are more widely used and as raw material for the industry. Wheat is the leading cereal plant in many regions of the world and one of the basic food stuffs in many countries of the world.
