We have a speciality seasoning that goes on the mullet, that has been gutted and the head removed with the scales remaining intact, that is slow smoked over an log fire (Oak or Hickory) for 5 to 6 hours to ensure all the flavorings of the smoke is injected. The smoked mullet will last approximately 14 - to 21 days. For the Dip we take a pick all the meat off the smoked mullet carefully removing all the bones, then we take cream cheese, mayo, and other seasonings to make our smoked mullet dip that will last approximately 21 to 30 days.
