Canned Abalone: Once cleaned and sorted by size, the abalone meat is weighted, canned in brine, cooked in autoclave, and packed in our certified plants located in Baja California. A strict quality control is maintained throughout the process. The sorting and weights are extremely precise. We have two presentations of abalone canned in brine: whole and pieces. We offer them with three registered trademarks: Rey del Mar, Cedmex and Rocamar. Whole Frozen Abalone: After weighting, the clean abalone meat is individually glazed in chilled water baths. The whole meats are then classified and separated for freezing and packing. Laid in metallic pans the meats are frozen at -20
