Premium Loligo Opalescens "California, Calamari, or Market" squid freshly harvested (2009 season) from the worlds best stocks of the Channel & Catalina Islands offshore of Southern California. Squid are harvested via seine netters or dip net boats at night by attracting the squid to surface with the use of high intensity lights. Once harvested from the Pacific, the squid are immediately placed into small, ultra modern refrigerated holds for transport 2-3 hours for offload under strict guidelines, then transported in slushed totes (in refrigerated trucks) to a fully certified processing plant less than 2 miles away.
