The Tuna is treated on board the ship which has HACCP plan. As soon asthe fish arrive on the deck professional fisherman cut the fish infillet and froze it through the tunnel to less 30 ?Celsius and then thefish is kept frozen in the hold at less 30?Celsius. The fish isactually in Rarotonga.
