Cinnamon (Cinnamomum verum) is an evergreen tree reaching to a height of 615m. Cinnamon and cassia are the oldest known spices. The dried inner barks of these two species are the products of commerce. The oldest cinnamon plantation is the Anjarakandy estate (250ha) in Kannur district of Kerala. It is cultivated in Kerala, Karnataka and Tamil Nadu. Its cultivation is more prevalent in hilly regions of the western ghats. The different grades of bark are powdered to get cinnamon powder
