DESCRIPTION : Cinnamon is an ancient spice mentioned several times in the Old Testament. Sri Lankan cinnamon has an excellent aroma and enjoys a dominating origin. Cinnamon is also popular in all regions where Persian or Arab influence is felt. Cinnamon is a food spice obtained from bark of the cinnamon tree. It is indigenous to Sri Lanka and Sri Lanka ranks among the largest cinnamon growing countries in the world. 1. Quills - Scraped peel of the inner bark of the mature plantation cinnamon shoots joined together by overlaps, the hollow of which has been filled with small pieces of the same peel and thereafter dried in the sun after air curing. Cinnamon quills shall be of the following grades.a). Alba b). Continental C 00000 (C5) Special, C 00000 (C5), C 0000 (C4), C 000 (C3), C 00 (C2), C 0 (C1) c). Quillings - Broken pieces below 200 mm in length (other than quills cut in specified short lengths) and splits of varying sizes of all grades of cinnamon quills which may include less than 3% of chips and featherings.3. Featherings - Pieces of inner bark obtained by peeling and /or scraping the bark of small twigs and stalks of plantation cinnamon shoots which may include less than 5% of chips.4. Chips - Dried unpeelable bark of plantation cinnamon shoots inclusive of the outer bark which has been obtained by beating or scraping the shoots.USE: Cooking spice - used to spice food, drinks and rice dishes.
