Granitas What is a Granita? With its ancient roots in Asia and then more recently refined and named in Sicily, this dessert is a combination of flavoring and sugar. Originally flavored with fruit juices, today the flavoring can be anything from 100% fruit juice to 0% juice flavoring extract, ranging from 100% natural to 100% artificial. The sugar is combined with the flavoring and, in sufficient quantity, is essential to keeping the dessert from freezing solid, but, instead retaining a granular texture.
