Cranberry juice concentrate is prepared by removing water from the de-pectinized, filtered juice extracted from mature, well colored, sound, washed cranberries of the North American variety Vaccinium macrocarpon. The resultant concentrate has the essence returned with a 7 to 1 ratio.
