The frozen particles are loaded onto trays that are sequentially introduced into the freeze-drying tunnel. This tunnel combines pre-established conditions with a high degree of vacuum and gentle heating sections, which sublimate the water. The granules dry and reach the set environmental temperature, completing the process.
This concludes the preliminary treatment of the product, preparing it for the freeze-drying process itself.
The next phase is the granulation of the frozen layer, which is cut into pieces and sieved, until the particles are of the size established for the freeze-dried product. This form and size will be definitive.
Then, the freezing process takes place. A fine layer of product is spread over a conveyor belt onto which it is frozen in various controlled stages.
At the beginning of this process, the concentrate is first sprayed with an inert gas. This phase is necessary to regulate the density and colour of the end product.
In the case of coffee, the initial stages of the freeze-drying process are the same as those of other dehydration procedures (atomisation and agglomeration), in that the green coffee undergoes the appropriate level of roasting, and after rough grinding, passes on to the extraction batteries where a liquid coffee extract is obtained that requires a preliminary concentration process. From this phase on, the paths split between conventional dehydration, which involves evaporation with occasional but intense thermal treatments, and the freeze-drying process.
Freeze-drying is a procedure for the dehydration of products, carried out in a vacuum, at low temperatures. It is based on frozen products and plays with the gradients of temperatures and vacuums, which enable the sublimation of the water (being converted directly from ice to gas).
