Carrot belongs to the carrot genus and the umbel family. It is an annual or biennial herbaceous plant. Originally planted in the temperate zone of Europe, northern Africa, and western Asia, it was brought into Taiwan from Japan in 1895.
It can withstand transportation and cool storage, carrot is supplied to the market all the year round. And it can be supplied for the urgent demands, especially when typhoon results in the shortage of vegetables, In addition to the domestic market, carrot is one of the few fresh vegetables which can be exported overseas. And it is mainly exported to Japan and Hong Kong.
Carrot is rich in vitamin A therefore, it is made into carrot juice for the beverage market and also used to mix into other drinks because of its nutrients.
