The finer coffees from Guatemala are prized for their nice level of acidity, a quality that is not missing in this decaf. This coffee's spiciness, cinnamon-like aroma and desirable acidic snap, make for a bracing morning cup.
When coffee cuppers go to work tasting decafs, they will usually choose decafs processed with methylene chloride as having the best all arotmd cup quality. This process may also go by other names
such as, KVW, European process or chemical process. Methylene chlorides volatility allows it to dissipate completely at 170 degrees Fahrenheit. Coffee is typically roasted at well over twice that
temperature for 20 to 25 minutes and brewed between 200 and 210 degrees. Because methylene chloride is a solvent it does not bond with coffee in general, but specifically with the caffeine
molecule, and therefore, removes the caffeine.
Through years of trial and experience, I have found that many wonderful coffees simply do not stand up to the decaffeination process, more than just the caffeine is lost; i.e. flavor and body. I
have found that when these two decafs are paired with their caffeinated counterparts for a side by side comparative taste test, the differences almost
defy perception.
