Because we dont mass-produce beef, our meat supply is somewhat limited.

Our beef is sold in wholes, halves or split-halves. A split half is half of a beef split into two equal portions. A split half usually weighs between 90-110 pounds. This requires from 4 to 5 cubic feet of storage.

They are harvested at a USDA inspected facility and aged for a minimum of 14 days, which enhances the flavor and tenderness. The meat is then hand cut, packaged in vacuum-sealed 100% barrier proof cryovac packaging and then frozen.

Once the heifers or steers enter the feeding program they are finished on grain and local alfalfa. They are hand fed until they are perfectly matured and finished.

The cattle are never given growth hormones nor are they fed antibiotics.

The calves stay with their mothers until they are weaned at seven to eight months old.

The health and well being of the cattle are one of our highest priorities. The cattle spend the majority of their lives in large fenced open green pastures. They have access to clean fresh water and mineral supplements.

The calves are all born and raised on ranches located in Calaveras County.

The herd has been closely monitored and only the cows that display good maternal instincts and consistently produce healthy calves are kept for the breeding program.

Angus cattle are hardy and adaptable animals. They produce healthy calves with a high carcass yield and good marbling.

The bull used on the ranch is a registered Angus bull purchased from Cal Poly in 2006.
