No smoking process is involved, just salt and pure mountain air for 24 months. This product is low in calories and exceptionally high in proteins, and is good for cholesterol control. There are two typesaccording to quality: Iberian acorn fed ham: Made from pigs bred and fattened exclusively on acorns and pastures. Iberian recebo ham: Made from pigs bred and fattened on a mixture of acorns and fodder.
