Burrata originates from a particular area of Italys Apulia region, called Murgia. It consists of a disk of fresh mozzarella shaped into a pouch and is stuffed with a mixture of mozzarella curds and fresh cream. Lourdes has created her own adaptation of the old recipe, pairing the modern with the traditional by mixing the tastes of sweet, savory, and tangy with the richness of mascarpone. The result is a slightly salty milky mozzarella shell encasing a creamy burst of carefully balanced flavors.
