Grate about 4 big size coconut squeeze without adding water and extract 750 ml coconut milk (FIRST MILK). Extract 3liters of THIN MILK by grinding the residue with luke warm water 2 to 3 times . Cook 'soaked ada' in thin milk. Prepare jaggary syrup by dissolving 1 kg of jaggary in 500ml boiling water. Strain and remove impurities of jaggary. Add jaggery syrup and continue stirring on gentle fire till adaprathaman is reduced to 2,75 liters. Remove from FIRE and stir. Add FIRST MILK. Mix properly. Add cardamom powder and one spoon ghee.
ADAPRATHAMAN/PORIDGE/PAYASAM
Boil 3 liters of milk with 1/2 liter water and add soaked ada. Keep stirring till the 'ada' is well cooked and very soft to touch. Add 750g of sugar and continue stirring on gentle fire till Paladaprathaman is reduced approximately 2.75 liters and colour changes form milk white to mild pink. Remove from fire. Stir for another 5 minutes Add one spoon of butter and add powder of 8 nos cardamom.
PALADAPRATHAMAN/PORIDGE/PAYASAM
Wash the contents (200g) of the packet with water, drain, soak in one litre boiling water in a covered vessal for 20 minutes. Wash the soaked 'ada' with cold water 2 to 3 times.
