The cheese is coated in Annatto, but on request can be left white.
The milk is cooled immediately after milking and this gives us a mild cheese, with a delicious flavour and without any of the "Goatiness" which is often associated with other goats cheese.
Sister Sarah is matured for just 4-6 weeks. The cheese is very white because the goats digest all the carotene the grass, unlike cows.
Sister Sarah is our newest cheese and the result of our First foray into maling goats' milk cheese. In essence it is a "cousin" to our saint Giles, being made in a similar way and it is a very mild, creamy, semi-soft cheese.
A fantastic very mild and creamy, semi soft cheese. With an Annato coating and hardly any "Goatiness" flavour.
