Most dry mix products cannot be called "yogurt" as the required culture dies in storage. However, Nanci's has encapsulated the yogurt culture so that it becomes active only when reconstituted with water. This unique manufacturing step allows for Nanci's frozen yogurt to provide approximately 125,000 culture colonies per ounce of yogurt.
