Ingredients
4 Italian Sausages
1 8oz Cup Marinated Mozzarella
8 small Yukon Gold Potatoes
? Red Onion
1 Bunch Baby Arugula
? Cup Red Wine Vinegar
Cracked Black Pepper
Sea Salt
Method
If the sausages are uncooked, grill then chill.
But for this dish I like to use a smoked Italian
sausage. And sometimes I go the extra step to grill
the sausage to give it a little more flavor. In any
event, cool and slice into bite sized pieces. Cook
the potatoes until almost done, cool and cut into wedges.
Slice the red onion into very thin slices. Drain the
marinated mozzarella and reserve the marinade. Then
finally cut the tomatoes in half.
Combine all of the ingredients in a bowl and dress
with a combination of 2 parts of the reserved marinade
with 1 part red wine vinegar. Serve over a bed of
arugula, or alternatively mix the arugula with the
other ingredients. Bon App
