Fresh Mozzarella Medallions
Vine Ripe Tomatoes
Fresh Basil
Extra Virgin Olive Oil
Cracked Black Pepper
Kosher Salt
Aged Balsamic Vinegar (optional)
Method
The amounts needed are dependant on the size of the
gathering. A good rule of thumb is to use about 3
slices of tomatoes and 3 slices of cheese per person
for a side dish sized portion. Use the Fresh Mozzarella
Medallions that are available in most grocery stores or
food service distributors. Use vine ripe tomatoes
(tomatoes on the vine) and fresh basil. To assemble
the platter, alternate slices of tomatoes with medallions
and basil leaves, as in the picture. Right before service,
drizzle olive oil over the salad and then sprinkle kosher
salt and cracked black pepper. In Italy, they never use
Balsamic vinegar, but its quite common in the States, so
if its your inclination, feel free. Also, try sea salt
for a nice crunch.
