salad-Green Bean and Potato

Ingredients
1 8oz Container Mozzarella Fresca Ovoline
4oz Green Beans, Cleaned & Blanched
8 small Yukon Gold Potatoes
8 Red Radishes, Cleaned and sliced
Fresh Basil, Chiffonade
1/8 Cup Red Wine Vinegar
? Cup Extra Virgin Olive Oil
? tsp Dijon Mustard
Cracked Black Pepper
Sea Salt

Method
Cook potatoes in salted, just boiling water
until they are almost done and cool in ice
water. When potatoes are cold, cut into
quarters. Drain and cut cheese into eighths.
Make a simple vinaigrette by combining oil,
vinegar, mustard, salt and pepper and mix
thoroughly. In a salad bowl, combine beans,
cheese, potatoes, radishes and basil along
with the vinaigrette and mix gently. Plate
