salad-Roast Beef Salad with Fresh Mozzarella Perles

Ingredients
1Lb Roast Beef

1 Red Bell Pepper
2 Celery Stalks
1 English Cucumber
? Bunch Cilantro
1T. Chopped Garlic
? Cup Red Wine Vinegar
? Extra Virgin Olive Oil
Kosher Salt and Cracked Black Pepper
8oz Fresh Mozzarella Perles

Method
Use either roast sirloin or trip tip. In a pinch,
go to your deli counter and have your butcher cut
thick slices from their in-case product. In any
event, the meat should be medium rare and sliced
when cold into sizes as shown in photo. Cut red
pepper into julienne sized pieces, cut celery and
cucumber also into thin slices and put all of the
meat and veggies into a bowl. Chop the cilantro
and add that to the bowl. Make a dressing of the
Oil, vinegar, garlic and salt and pepper to taste.
Dress the salad and lastly add the fresh
mozzarella perles. Bon app
