Ingredients
1 lb Dried Capellini
1 bskt Grape Tomatoes
2 handfuls Baby Arugula
? container (4oz) Mozzarella Fresca Perlini
? Cup Extra Virgin Olive Oil
1 T. Chopped Garlic
Kosher Salt and Fresh Cracked Black Pepper
Method
Cook Capellini in rapidly boiling salted water
for about 3-4 minutes, max. Drain in colander
and shock in a bowl of ice water to stop the
pasta from cooking. In a large bowl combine
Olive Oil and Garlic, Salt and Pepper. Drain
Cappelini and add to oil mixture and mix
thoroughly. Wash tomatoes, slice in half and
add to pasta. Mix in 2 large handfuls of Baby
Arugula, combine all ingredients thoroughly
and youre in business. Arrange pasta on
serving platter and sprinkle the drained
Perlini over the top. Buon Appetito!!
