Of all the different forms of tea produced, oolong teas are among the most sought after and highly priced. Prized by people of the Far East, oolong teas are only produced using the top leaf of the
tea plant, using a process that requires years of training and experience. This experience is usually handed down in families through the generations. Chinese families who fled from Communism have
been carrying out the traditions of oolong tea production in the northern mountains of Thailand and passing down their skills to their descendants. During oolong tea production, the tea leaf is
allowed to only partially oxidize. This results in oolong tea having a color darker than green tea but lighter than black tea. The taste is also stronger than green tea but less bitter than black
tea. Depending on the variety of the leaf, oolong tea can have a very sweet and pleasant aftertaste without the need for flavoring.
