History of Kombucha

Kombucha tea is made from the kombucha tea "mushroom," a large, flat, pancake-shaped fungus-like growth. Technically, the kombucha is not a mushroom, nor is it purely a fungus. Rather, it is part
lichen, part bacterium xylinum, and part natural yeast culture. When placed in a mixture of ordinary sugar and tea for 7 to 10 days, the kombuch produces both a winey-tasting health- restoring tea
and a new "baby" kombucha.
The history of kombucha tea can be traced back 2,000 years to China, Russia, Japan, and Korea. Over time, it has been used as a curative in many regions, primarily in Manchuria and Russia. Russian
scientists studied the fungus during the 1950s, 1960s, and 1970s. According to Moscow Central Bacteriological Institute, kombucha tea, when properly made, contains a number of substances important
for good health, including gluconic acid, which impedes the progression of viral infections and can dissolve gallstones; hyaluronic acid, a component of connective tissue; chondroitin sulfate, a
component of the stomach lining and the vitreous humor of the eye. The beverage also contains vitamins B1 (thiamine), B2 (riboflavin), B3 (niacin), B6 (pyridoxine), and B12; folic acid; lactic
acid; dextrogyral; and usnic acid, a substance with strong antibacterial and antiviral effects.
According to researchers and to anecdotal evidence, kombucha tea is a potent immune system booster, and can be an important part of treatment for acne, aging sking, AIDS, arteriosclerosis
(hardening of the arteries), arthritis, asthma, bronchitis, cancer, candidiasis, chronic fatigue, constipation, diabetes, diarrhea and other digestive disorders, hair loss, hemorrhoids, high
cholesterol, hypoglycemia, incontinence in both men and women, kidney and gallstone disorders, menopausal problems, multiple sclerosis, premenstrual syndrome, prostate problems, psoriasis, and
weight problems. It is also said to greatly increase energy, and to promote a general feeling of well-being.
Although it is possible to prepare kombucha tea at home and the tea-making process relatively inexpensive, it is labor intensive and very sensitive to cold, light, mold and in this brewers
opionion, it can even be negatively effected from the emotional wellbeing of the individual brewer. Whether it is a home brew or a local purchase, the key to healthy living begins with the
choices of what to put in / on / around your body.
Some commercial products is that have a sour taste due to the longer fermentation process. It has been suggested that the longer process does not positively affect the product's potency; however,
to slightly disagree, we suggest that the longer the fermentation period - the less drink necessary to modify or balance the body PH. The sweeter drinks have a higher sugar content, which is
what the kombucha culture processes as the mushroom grows.
Also available are extracts and tinctures made from the pressed fungus. These products are handy when traveling and are particularly effective more motion sickness.

I started drinking deKombucha in 2004 when I lived in Seattle WA. At that point in time, there were not many distributors and I prefered locally made kombucha - deKombucha was not the only
choice available, but it certainly was my favorite. It was brewed locally, bottled and delivered to my home. Eventually, I purchased the starter kit and began brewing my own.
Hmmm... it sounds pretty easy, but I did have mold on several batches. The rep came to my home and helped me isolate the problem(s) and now I brew my own, but I still prefer some of the
deKombucha Flavors.

I remember drinking this years ago! I could not get my kombucha to grow properly, so eventualy I (dare I say it) threw it away. Just a week ago, our local distributor brought me a
sample of their newest flavor and I loved it! Personally, I don't have the time nor dedication it takes to make the tea, but I am so glad that someone locally will do it for me. I chose
the 2.2 liter air pot for my office and one for home. That way I can drink it anytime I like.
