Dongting Lake, the enormous at the mouth of the lake to the Yang-tse River, is an important port for many cruise ships that sail between Chongqing and Wuhan. It is the second largest fresh water lake in China, covering 3,900 square km. Among the few islands Junshan Island is the most renowned, which is famous not only for its scenic beauty but its tea. Junshan Yinzhen (Junshan Silver Needle) used to be imperial tribute. Added into hot water, the tea sticks up like needles instead of sinking to the bottom, emitting a fragrant odor. The island had dozens peaks and a large coverage of bamboos as well.

Junshan Island, around 1,000 square kilometer, is situated in Dong-ting Lake, the biggest freshwater lake in China. The island had a long history of tea-cultivation. Around the 10th century, tea from here became a tribute to the court.

Once belonged to yellow tea, the one characterized by its yellowish leaves from hour-long waiting to be roasted, this tea is nowadays categorized under green tea for its unnoticeable fermentation.

Listed in top-ten and won gold medal at International Exposition, Leipzig, 1956, this was once the most expensive green tea in China for its limited output and unique style. By observing strict rules, the harvest starts form March, when the leaves are still in shape of bud. The procedure of its making is quite time-consuming - taking more than three days to finish all of its eight stages. In its brew, the leaves will rise and fall vertically three times, an unusual spectacle in chinese teas.

Silver Needle Tea



This tea is grown on Monarch Mountain in Yeuyang in Hunan Province. Junshan (etf) has a unique flavor that is slightly nutty with hints of sweetness. Yellow tea is rare and consists of budlets or silver needles of the unopened shoots. By yellowing the leaves in piles, the aromas infuse deeply into the leaves as they are completely dried. All the buds are silky smooth when dry and almost shimmer with their small hairy covering. There is a faint woody, smokey taste that is very subtle. A special tea that is a good alternative to its cousin, the more common Baihao Yinzhen white tea. Use about one tablespoon or more (3-4 grams) and steep for two minutes with water about 180 degrees. Use three times to extract all that this tea has to offer.
