Green Tea is an expression for all kind of not fermented and not oxidized tea. Only this kind of tea (i.e. their extracts) still contains all active substances, that means vitamins and minerals are not destroyed in the manufacturing process. One substance of green tea has to be mentioned particularly: its polyphenols. Recently it is said by different research laboratories that they are supposed to have an anti-oxidizing effect.
